WPI 90 (Whey Protein Isolate 90%) is the highest-purity form of whey protein commercially available. It is produced from liquid whey by cross-flow microfiltration (CFM) or ion exchange chromatography, both of which remove virtually all fat and lactose while concentrating the protein to a minimum of 90% on a dry matter basis. CFM uses physical membrane separation and preserves the native structure of bioactive whey proteins (lactoferrin, immunoglobulins, beta-lactoglobulin). Ion exchange uses pH-based charge adsorption and tends to yield slightly higher protein purity but may denature some minor bioactive fractions. Both methods produce a premium isolate suitable for food, sports, clinical, and pharmaceutical applications.
WPI 90 contains a minimum of 90% protein on a dry matter basis – typically 90.5–93% per batch. This compares to WPC 80 at min. 80% (typ. 80.5–83%). The 10-percentage-point difference means: (1) you need less WPI by weight to achieve the same protein content in a formulation; (2) fat is max. 1% vs. max. 7% in WPC; (3) lactose is max. 1% vs. 3–5% in WPC. For protein bars and shakes where every gram of protein counts and label claims are critical, WPI 90 delivers a cleaner nutritional profile and allows higher protein claims per serving with lower ingredient inclusion rate.
WPI 90 Regular is the standard, non-instantised isolate. It disperses well with mechanical agitation (industrial mixers, shakers) and is the cost-efficient choice for manufacturing where dissolution is handled by process equipment. WPI 90 Instant is coated with soy or sunflower lecithin (0.3–0.5%) during a re-agglomeration step. The lecithin treatment dramatically increases wettability and dispersibility – the powder disperses in cold water within 30 seconds with minimal stirring. WPI 90 Instant is the premium choice for: consumer-facing RTM sachets and tubs, RTD beverage production lines where cold-blending occurs, and any application where smooth texture without clumps is critical for end-user experience.
WPI 90 is the best dairy-derived protein for lactose-sensitive formulations. Lactose content is max. 1%, typically 0.3–0.8%. To put this in context: a 30g serving delivers approximately 0.09–0.24g of lactose. Clinical studies show that most individuals with lactose intolerance can tolerate up to 12g of lactose per sitting without symptoms. At WPI 90 dosages, the lactose load is negligible. For comparison, a glass of milk contains ~12g of lactose. WPI 90 is not, however, classified as "lactose-free" under EU labelling rules (which require <0.1g/100ml in liquid format) – if your product requires this claim, verify with your regulatory advisor based on the final product composition.
WPI 90 has a virtually identical amino acid profile to WPC 80, as both originate from the same protein fractions. Per 100g protein: Leucine ~11g, Isoleucine ~6g, Valine ~6g (BCAAs ~23g total), Lysine ~9.5g, Threonine ~7.5g, Methionine ~2.2g, Cysteine ~2.5g, Tryptophan ~2.0g, Histidine ~1.9g. PDCAAS = 1.0. The key advantage of WPI over WPC is not the amino acid profile but the purity – the same amino acids are delivered with less fat, lactose, and caloric "noise". This makes WPI 90 the preferred choice when protein purity on the label, not just amino acid quality, is the key differentiator.
Store WPI 90 in cool (below 20°C), dry (relative humidity below 65%), well-ventilated conditions, away from direct sunlight, heat sources, and strong odours. The multi-layer kraft paper bags provide good moisture barrier properties. Shelf life is 18–24 months from production date in original sealed packaging. After opening, transfer to a sealed, food-grade container and use within 4–6 weeks. WPI 90 is slightly more hygroscopic than WPC 80 due to lower fat content, so moisture control during storage is especially important. Do not store near flavour ingredients, cleaning agents, or other pungent materials.
The batch CoA for WPI 90 covers: production date and lot number, manufacturer and country of origin, physical parameters (moisture, bulk density, colour, particle size), proximate composition (protein, fat, lactose, ash), microbiological results (total aerobic count, coliforms, Salmonella, Listeria monocytogenes, Staphylococcus aureus), pH value, and – where applicable – heavy metals (Pb, Cd, Hg, As). Additional testing (pesticide residues, ELISA allergen tests, specific amino acid profile, antibiotic residues, PDCAAS calculation) available on request against additional cost. CoA is batch-specific and provided with every shipment as standard.
The minimum order for both WPI 90 Regular and WPI 90 Instant is 20 kg (one bag). There are no annual volume commitments, minimum monthly purchase requirements, or contract obligations. You can order a single bag for a pilot batch and scale up as your production grows. Orders above 200 kg, 500 kg (Big Bag), or full pallet quantities (typically 800–900 kg for 20-kg bags) qualify for volume pricing — contact us for a tailored quote.

Forward planning orders with a 2–4 week flexible delivery window often achieve better pricing and allow us to source optimal batch specifications for your application. Big Bag orders require additional 3–7 days for FIBC filling, labelling, and quality check.
WPI 90's key differentiators — high purity, ultra-low lactose, low fat — make it the preferred choice for: (1) Premium sports nutrition – high-protein shakes, protein blends where >80% protein per serving is required, lean mass gainers; (2) RTD protein beverages – clear or translucent protein drinks where fat or lactose would cause cloudiness/instability; (3) Clinical and medical foods – high-protein, low-fat, low-lactose tube feeds and oral supplements; (4) Meal replacement products (MRP) – where clean label and maximal protein density are priorities; (5) Infant formula co-formulations (under strict regulatory conditions); (6) Sports bars – whey isolate typically used in conjunction with other proteins for binding and texture; (7) Lactose-free dairy applications – protein enrichment of lactose-free dairy beverages and desserts.
WPI 90 Regular dissolves most efficiently at 35–55°C with moderate agitation. Best practices: (1) Add powder to water, not water to powder – prevents surface wetting issues; (2) Use a high-shear mixer or rotor-stator homogeniser for large batches; (3) Allow 15–20 minutes hydration time before processing; (4) Maintain pH in the neutral range (6.0–7.0) for optimal solubility – acidic conditions below pH 4.5 will cause protein precipitation near the isoelectric point (~pH 5.0); (5) Avoid temperatures above 70°C during dissolution to minimise denaturation. For RTD beverage production, WPI 90 is typically dissolved in cold water first, then the solution is pasteurised – this sequence minimises heat-induced aggregation. For WPI 90 Instant, cold water dissolution is efficient with minimal agitation.
Yes, WPI 90 is one of the best choices for clear, low-pH protein beverages (protein waters, isotonic protein drinks). The low fat content (<1%) prevents fat globule haze, and the low lactose content avoids lactose-driven turbidity. WPI 90 can form clear solutions at pH 3.5–4.0 (typical for flavoured sports waters) because the protein remains soluble at low pH values – unlike WPC, where fat precipitation causes cloudiness. Recommended inclusion rate for clear protein beverages: 2–5% WPI 90 by weight, achieving 20–50g protein per litre. Note: always use high-quality WPI 90 with verified low fat content (batch CoA confirmed), as even small fat amounts cause haze in clear drinks.
Like all whey proteins, WPI 90 denatures irreversibly above approximately 65–72°C in solution. Beta-lactoglobulin denatures at ~65°C, alpha-lactalbumin at ~62°C. Denaturation leads to protein unfolding and aggregation (gelation or precipitation). This is critical for RTD beverage production: if WPI 90 is dissolved and then heat-treated (pasteurisation at 72°C/15s or UHT at 135°C/4s), protein aggregation and sedimentation can occur. Mitigation strategies: use microfiltered or heat-stable WPI variants, apply UHT in indirect heating systems, add calcium chelators (sodium hexametaphosphate, citrate) to stabilise the system, or reduce protein concentration before heat treatment. In dry applications (bars, baked goods), denaturation during processing is generally desirable as it contributes to texture.
WPI 90 is a standard ingredient in clinical and medical nutrition due to its high protein purity, low fat, low lactose, and complete amino acid profile. It is used in: oral nutritional supplements (ONS) for malnutrition or recovery, enteral tube feeds requiring concentrated protein with minimal volume, wound-healing formulas requiring high leucine and arginine content, renal disease formulations (where WPI's high BV and low phosphorus/potassium vs. meat proteins are advantageous), and post-surgical nutrition. For formulations regulated as medical foods (Regulation EU 609/2013), full compositional compliance verification is required — WPI 90 typically meets the protein quality criteria but the full formula must be validated against the regulation.
Shelf life of WPI 90 is 18–24 months from the production date in the original sealed packaging under recommended conditions (<20°C, RH <65%). The primary shelf-life limiting factors are: (1) Maillard browning – reaction between trace lactose and lysine side chains, accelerated by temperature and humidity, causing colour change and reducing lysine bioavailability; (2) Fat oxidation – even at <1% fat, trace oxidation can cause off-flavours (rancid, cardboard notes), especially in sunflower-lecithin instantised variants; (3) Moisture uptake – WPI is hygroscopic; caking and reduced flowability occur if humidity exceeds 65% RH. Nitrogen-flushed packaging extends shelf life to 24+ months. In finished product formulations, the shelf life of WPI 90 in a matrix (bar, RTD) will be shorter than the raw material due to additional processing and packaging considerations.
Yes. Our WPI 90 is produced under HACCP-certified conditions in full compliance with EU food hygiene law — Regulation (EC) 852/2004 (food hygiene) and Regulation (EC) 853/2004 (hygiene of animal-origin foods). The product meets compositional standards under EU dairy and food additive legislation. For use in specific regulated product categories such as infant formula, foods for special medical purposes (FSMP), or sports foods under Regulation (EU) 609/2013, additional category-specific compliance documentation is required. Contact us to discuss your specific regulatory context.
WPI 90 Regular: Contains MILK. WPI 90 Instant: Contains MILK; may contain SOY (if soy lecithin) or SUNFLOWER (if sunflower lecithin) — confirm with CoA for the specific batch. Both products are produced on equipment that may also process other milk derivatives and potentially egg derivatives — cross-contact risk exists and is disclosed in the allergen declaration. Allergen labelling complies with Regulation (EU) 1169/2011. A full allergen matrix covering 14 EU major allergens is available on request. For soy-free formulations, request WPI 90 Instant with sunflower lecithin or use WPI 90 Regular.
WPI 90 is typically classified under CN code 0404 10 82 (Whey and modified whey, concentrated, containing protein in the dry matter >80%) for food-use imports within the EU Combined Nomenclature, or 3502 10 90 (Albumins: other) when classified by certain authorities based on degree of processing. The applicable code may vary by member state and intended use — always confirm with your customs broker before import. All FDCM shipments include the HS code on the commercial invoice. EUR.1 movement certificates and certificates of origin are available on request for exports to third countries with EU trade preferences.
In the ingredient declaration of finished food products, WPI 90 is declared as "Whey Protein Isolate" or "Whey Protein Isolate (Milk)" per Regulation (EU) 1169/2011, with the milk allergen clearly indicated. It is a food ingredient, not a food additive — no E-number is used. For nutrition and health claims under Regulation (EC) 1924/2006: "source of protein" requires ≥12% of energy from protein; "high in protein" requires ≥20% of energy from protein; "high-protein" in specific product categories may follow category-specific rules. At typical WPI 90 inclusion rates, these thresholds are readily achieved. For sports food category claims under EU 609/2013, specific labelling and formulation requirements apply.
Halal-certified WPI 90 batches are available on request, subject to stock and batch sourcing. Availability depends on the specific producer and current lot. Kosher-certified batches are also available for select producers — contact us to confirm current availability. Please note: WPI 90 Instant produced with soy lecithin requires the lecithin to also carry the relevant certification. Halal/kosher certificates are third-party issuer documents — we provide copies of the original certificates for the specific batch. If certified material is not currently in stock, lead time is typically 2–4 weeks for sourcing. Specify your requirements at the time of inquiry.
WPI 90 Regular — derived from bovine whey — is not subject to EU GMO labelling rules (Regulation (EC) 1829/2003 and 1830/2003). The EU "from animals fed GMO crops" exemption means that dairy proteins from cows fed GM soy or GM corn do not require GMO labelling on the finished product. WPI 90 Instant with soy lecithin must be evaluated separately for lecithin GMO status: soy lecithin is typically so highly refined that it contains no detectable GM protein or DNA, and most suppliers issue "GMO: not applicable" declarations for it. If your brand requires a verified "non-GMO" claim on the finished product, request a batch-specific declaration from us and consult legal counsel on the applicable standard in your market (EU, US USDA, etc.).
